As Executive Chef, he brings a wealth of experience in luxury hospitality, refined technique, and a passion for seasonal, ingredient-driven cuisine.

Chef Tushar Kandalgaonkar brings a globally inspired perspective to the culinary program at Fairmont Grand Del Mar. Born and raised in Mumbai and formally trained at Niagara College in Canada, his career reflects a dynamic blend of international technique and regional sensibility.

His career has been shaped by experience in some of the world’s most celebrated kitchens, including Sidart (New Zealand), Attica (Australia), Langdon Hall (Canada), Fairmont Banff Springs, and most recently Fairmont Empress.
